*Our bulk pricing is based on the hanging weight of a cow. This is the weight of a processed animal before it is cut up and dry-aged. When the dry-aging process is complete (10-14 days) and the beef is cut up, it loses weight in moisture, bones, and fat. The remaining meat is the "finished weight". Since each cow varies in size and yield, it works best for us to charge by hanging weight. This also allows us to account for processing fees right away.
